Harvest: Late August to early September, to ensure a balanced expression of acidity and fruit.

Fermentation: Temperature-controlled stainless steel fermentation with selected varietal yeasts, following a brief cold maceration on the skins.

Ageing: Sur lie, in temperature-controlled steel vats for 3 months.

Refinement: 1 month in bottle.

Alcohol: 12%

Residual Sugar: 4 g/l

Total Acidity: 5.5 g/l

SO₂: 140 mg/l

Serving Temperature: 8–10°C

Format: Bordelaise bottle, 12 bottles per case.

Appearance: Light titanium yellow, bright and vibrant.

Aroma: Jasmine, pear and citrus fruit.

Palate: Fresh, crisp notes of underripe pear, green apple and lemon zest, with hints of light stone fruit, delicate florals and a subtle almond finish.

Villa Cornaro draws its Pinot Grigio from delle Venezie D.O.C., the north-eastern appellation that made the variety a staple far beyond Italy. Picking runs from late August into early September, timed for a balanced expression of acidity and fruit.

A brief cold maceration on the skins precedes temperature-controlled fermentation in stainless steel with selected varietal yeasts. Three months sur lie and a month in bottle round the wine out, leaving jasmine, pear and citrus over a fresh, crisp palate that closes on a subtle almond note.
