Bird in Hand is a family-owned winery cultivating cool-climate artisan wines that capture the spirit of South Australia’s Adelaide Hills. The Bird in Hand Foundation supports creativity, gender & indigenous equality through education & the arts. Beginning in 1997 in South Australia with the lofty goal of creating internationally recognized wines, their story is one of passion and determination. Inside of a single generation, their vision and dedication to quality continues to manifest in some of the world’s finest flavors.

They produce wines across four specialty tiers: Tribute Series, Nest Egg, Bird in Hand and Two in the Bush. Among the collections, there is an ideal wine for every occasion, each outstanding in its own way. In the enjoyment of all aspects of life, a philosophy that extends beyond wine making, to a restaurant and art gallery, live music events and many miscellaneous adventures.

THE STYLE

The Tribute Series represents the very pinnacle of Bird in Hand’s pursuit of excellence in winemaking. The rare wines show the incredible beauty and quality of which the terroir is capable, expressing a unique moment in time with elegance, power and finesse.

The MAC Shiraz was created from the outstanding 2013 vintage by selecting and blending only the finest barrels of Shiraz. Following 24 months in tightly grained French oak individual parcels of Shiraz were selected & the resulting wine was blended. Due to the richness, firm tannins and intense fruit flavours the MAC Shiraz was further bottle aged for 12 months.

The result was 2200 individually numbered bottles of deep red Shiraz with dense aromas of ripe blackberry fruit, spice and pepper. The complex palate is a silky expression of the aromas complementing integrated oak, firm tannin and a long lingering finish.

This extremely limited wine will cellar exceptionally well and reward the patient and discerning collector.

PAIRING NOTES

While Shiraz tends to go with all red meats like lamb and beef. It’s a rich and gamey meat that pairs with the full palate of Shiraz wonderfully.
