THE WINE & THE REGION

Bird in Hand is a family-owned winery cultivating cool-climate artisan wines that capture the spirit of South Australia’s Adelaide Hills. The Bird in Hand Foundation supports creativity, gender & indigenous equality through education & the arts. Beginning in 1997 in South Australia with the lofty goal of creating internationally recognized wines, their story is one of passion and determination. Inside of a single generation, their vision and dedication to quality continues to manifest in some of the world’s finest flavors.

They produce wines across four specialty tiers: Tribute Series, Nest Egg, Bird in Hand and Two in the Bush. Among the collections, there is an ideal wine for every occasion, each outstanding in its own way. In the enjoyment of all aspects of life, a philosophy that extends beyond wine making, to a restaurant and art gallery, live music events and many miscellaneous adventures.

THE STYLE

Top shiraz parcels were processed gently from start to finish. Fruit is partially destemmed, with up to 50% whole berries then transferred to small, open top fermenters.

Parcels spend around 7-12 days on skins, with twice-daily analysis from the winemakers to ensure optimum colour and flavour. The premium oak barrels chosen for maturation were selected specifically to maximise the flavour profile of the shiraz.  The wine spent 22 months ageing in barrels that are 65% new oak.

The resulting limited release wine is deep coloured, dark red with a bright ruby hue. Powerful yet distinctly cool climate, on the nose flavours of brambly black fruit are apparent, supported by cracked pepper, nuanced floral violets and black olive. Structured in its youth, with rich and brooding shiraz fruit, the wine will develop and evolve beautifully over time.
