Beginning in 1997 in South Australia with the lofty goal of creating internationally recognized wines, their story is one of passion and determination. They produce wines across four specialty tiers: Tribute Series, Nest Egg, Bird in Hand and Two in the Bush. The Nest Egg series is an elite group of Bird in Hand wines that have been specifically chosen by the winemaking team to receive the utmost care and attention. Limited quantities available.

Grapes were handpicked in the early morning from a single site in the Mount Torrens area of the Adelaide Hills, a cooler pocket that sits at around 450m elevation. Whole bunch pressed directly to French oak barriques (40% new), the fruit underwent a wild ferment, before being stirred twice-weekly to develop texture and promote partial malolactic fermentation. Each barrel is assessed individually to determine suitability and only the most exceptional fruit is selected for the Nest Egg blend.

On the nose, the wine displays complex and intense characteristics of white peach and grapefruit, with subtle notes of apricot, cashew and flint. On the palate, the wine’s intense flavour is complemented by a delicate mouthfeel, with textural oak components balanced by a natural acidity.

Fish (halibut, cod) and shellfish (lobster, shrimp, crab, scallops.) – Simply seasoned poultry and pork dishes.
