THE WINE & THE REGION

Pavo Real wines reign from the Independence Valley region in Dolores Hidalgo, Guanajuato, Mexico. With a rich history, the Mexican father and leader of the Independence Priest Miguel Hidalgo harvested wine grapes in the 19th Century in the same land in which the grapes that produce this wine are cultivated today.

Guanajuato is Mexico City’s most proximate wine country destination sits at elevations of up to 6,500 feet. Soils here are composed of loamy clay, which helps retain moisture in the semi-desert climate.

Pavo Real, Spanish for Peacock is a unique assembly of originally European varieties, with grapes cultivated at 2000 meters above sea level nourishing them with the depth and complexities that the region and land has to offer. We invite you to enjoy a glass of Mexico’s rich history.

THE STYLE

“Pavo Real Red Wine exhibits intense and fruit forward aromas of dried strawberry, black cherry liqueur, black currants, crushed pomegranates, violets, wet leaves, wild herbs, black pepper, cacao nibs, wet leather and dried clay. The palate is full, layered, rich and spicy with flavors of preserved raspberries, strawberries, bitter chocolate, dried herbs and baking spices.”

PAIRING NOTES

This intense and flavorful wine demands a rich meal. Beef fajitas with grilled onions and spicy chorizo dishes will stand up to Pavo Real Red Wine. Pair with sweet sopapillas for a decadent Pavo Real experience.
