THE WINE & THE REGION

Pavo Real wines reign from the Independence Valley region in Dolores Hidalgo, Guanajuato, Mexico. With a rich history, the Mexican father and leader of the Independence Priest Miguel Hidalgo harvested wine grapes in the 19th Century in the same land in which the grapes that produce this wine are cultivated today.

Guanajuato is Mexico City’s most proximate wine country destination sits at elevations of up to 6,500 feet. Soils here are composed of loamy clay, which helps retain moisture in the semi-desert climate.

Pavo Real, Spanish for Peacock is a unique assembly of originally European varieties, with grapes cultivated at 2000 meters above sea level nourishing them with the depth and complexities that the region and land has to offer. We invite you to enjoy a glass of Mexico’s rich history.

THE STYLE

An outstanding wine. Originates in Baja, Mexico. Crisp and fresh with notes of tropical fruits. Full-bodied, creamy and pleasant palate. Aged in steel barrels.

PAIRING NOTES

Pavo Real White Wine pairs excellently with Baja style Mexican dishes such as red snapper tacos with pico de gallo and salmon a la parrilla. The citrus flavors of this wine will also enhance lighter dishes such as enchiladas verdes and vegetarian tacos. For a unique cocktail, use Pavo Real to make a white wine margarita.
